III. Preparation

A. Preparing the filling

  1. In a skillet, brown the ground beef with diced onions, minced garlic, diced bell peppers, and jalapeños (if using).
  2. Season the beef mixture with chili powder, cumin, paprika, salt, and pepper to taste.
  3. Once the beef is cooked through and the vegetables are tender, remove the skillet from heat and let the mixture cool slightly.
  4. Stir in refried beans and shredded Mexican blend cheese until well combined.

B. Assembling the chimichangas

  1. Lay out a flour tortilla and spoon the beef and cheese filling onto the center of the tortilla.
  2. Fold the sides of the tortilla over the filling, then roll it up tightly to form a chimichanga.
  3. Secure the ends with toothpicks to prevent them from unraveling during cooking.

IV. Cooking Method

A. Frying the chimichangas

  1. Heat oil in a deep fryer or skillet to 350°F (175°C).
  2. Carefully place the chimichangas into the hot oil, seam side down, and fry until golden brown and crispy, about 2-3 minutes per side.
  3. Once cooked, remove the chimichangas from the oil and drain them on paper towels to remove excess oil.

B. Baking option for a healthier alternative

  1. Preheat your oven to 400°F (200°C).
  2. Place the assembled chimichangas seam side down on a baking sheet lined with parchment paper.
  3. Lightly spray the chimichangas with cooking spray to help them crisp up in the oven.
  4. Bake for 20-25 minutes, or until the chimichangas are golden brown and crispy.
