Carrot Cake Roll with Cream Cheese Filling




For the Filling:

  • 1 cup confectioners’ sugar
  • 1 8 oz. package cream cheese, softened
  • 6 tbsp. salted butter, softened
  • 1 tsp. pure vanilla extract

For the Glaze Drizzle:

  • 3 cups confectioners’ sugar
  • 1/2 teaspoon vanilla extract
  • 10-11 tbsp. milk

Directions

  1. Preheat the Oven: Preheat oven to 375°F (190°C) and line a 15 x 10 inch jelly roll pan with parchment paper, leaving a little overhang on each side.
  2. Prepare the Dry Ingredients: In a medium bowl, combine flour, cinnamon, baking powder, salt, ginger, nutmeg, and cloves. Whisk to combine.
  3. Mix Wet Ingredients: In a large bowl, combine eggs and granulated sugar. Whisk until combined. Add vegetable oil, vanilla extract, and shredded carrots. Mix until combined.
  4. Combine Dry and Wet Ingredients: Pour the dry ingredients into the large bowl with the wet ingredients. Fold gently until just combined. Do not overmix.
  5. Bake the Cake: Pour the batter into the prepared jelly roll pan and spread it into an even layer. Bake for 12 minutes or until the cake is set and springs back when lightly touched.
  6. Roll the Cake: Remove the cake from the oven and immediately lift it out of the pan using the overhang on the sides. Lay the cake on a large wood cutting board and gently roll the cake lengthwise, starting from one short end.
  7. Prepare the Filling: In a medium bowl, combine confectioners’ sugar, softened cream cheese, softened butter, and vanilla extract. Whisk until smooth and creamy.
  8. Assemble the Cake Roll: Carefully unroll the cake and spread the filling onto the cake, leaving a small gap on all edges. Reroll the cake tightly and wrap it tightly with plastic cling wrap.
  9. Chill the Cake: Place the wrapped cake roll in the refrigerator and chill for at least 1 hour before serving.
  10. Prepare the Glaze Drizzle: When ready to serve, combine confectioners’ sugar, vanilla extract, and milk in a mixing bowl. Whisk until smooth. Drizzle the glaze over the chilled cake roll.
  11. Slice and Serve: Slice the cake roll into portions and serve. Enjoy!
