- Preheat your oven to 350°F (175°C).
- In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
- Add diced onions, red bell pepper, green bell pepper, and minced garlic to the skillet. Cook until vegetables are tender.
- Stir in the cooked rice, diced tomatoes, tomato sauce, Italian seasoning, salt, and pepper. Mix well.
- Transfer the mixture into a greased 9×13 inch baking dish.
- Sprinkle shredded mozzarella cheese evenly over the top.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
