Ingredients

  • 1 package (14 oz) refrigerated pie crusts (2 crusts)
  • 4 large eggs
  • 1/2 cup milk
  • 1/2 cup shredded cheese (such as cheddar, Swiss, or mozzarella)
  • 1/4 cup diced cooked bacon, ham, or sausage (optional)
  • 1/4 cup diced vegetables (such as bell peppers, onions, spinach, or mushrooms)
  • Salt and pepper to taste

Preparation Time

  • 15 minutes

Baking Time

  • 20 minutes

Instructions

Step 1: Prepare the Crust

  1. Preheat your oven to 375°F (190°C). Lightly grease a mini muffin tin with cooking spray.
  2. Roll out the refrigerated pie crusts on a lightly floured surface. Using a round cookie cutter or drinking glass, cut out circles slightly larger than the size of the muffin tin cups.
  3. Press each dough circle into the muffin tin cups, shaping them to fit snugly. Trim any excess dough around the edges.

Step 2: Prepare the Filling

  1. In a mixing bowl, whisk together the eggs and milk until well combined. Season with salt and pepper to taste.
  2. Stir in the shredded cheese, diced cooked meat (if using), and diced vegetables until evenly distributed.

Step 3: Assemble and Bake

  1. Spoon the egg mixture evenly into each prepared mini pie crust, filling each cup about three-quarters full.
  2. Place the mini quiche muffin tin in the preheated oven and bake for 18-20 minutes, or until the quiches are puffed up and golden brown on top.
  3. Remove the mini quiches from the oven and let them cool in the muffin tin for a few minutes before carefully transferring them to a wire rack to cool completely.
