Walking Taco Bake




A. Cooking the filling

  1. In a large skillet, cook the ground beef over medium heat until it’s browned and cooked through.
  2. Add chopped onion and minced garlic to the skillet and cook until they are softened and fragrant.
  3. Stir in taco seasoning, canned diced tomatoes (undrained), black beans (drained and rinsed), and corn (drained).
  4. Simmer the mixture for 5-10 minutes, allowing the flavors to meld together.

B. Assembling the casserole

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×13-inch baking dish with cooking spray.
  3. Spread a layer of tortilla chips evenly across the bottom of the baking dish.
  4. Spoon the cooked taco filling over the tortilla chips, spreading it out into an even layer.
  5. Sprinkle shredded cheese over the top of the taco filling, covering it completely.

C. Baking the casserole

  1. Cover the baking dish with aluminum foil and bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  2. Remove the foil and bake for an additional 5-10 minutes, or until the cheese is golden brown and the edges are bubbly.
  3. Remove the casserole from the oven and let it cool slightly before serving.
