A. Cooking the filling
- In a large skillet, cook the ground beef over medium heat until it’s browned and cooked through.
- Add chopped onion and minced garlic to the skillet and cook until they are softened and fragrant.
- Stir in taco seasoning, canned diced tomatoes (undrained), black beans (drained and rinsed), and corn (drained).
- Simmer the mixture for 5-10 minutes, allowing the flavors to meld together.
B. Assembling the casserole
- Preheat your oven to 350°F (175°C).
- Grease a 9×13-inch baking dish with cooking spray.
- Spread a layer of tortilla chips evenly across the bottom of the baking dish.
- Spoon the cooked taco filling over the tortilla chips, spreading it out into an even layer.
- Sprinkle shredded cheese over the top of the taco filling, covering it completely.
C. Baking the casserole
- Cover the baking dish with aluminum foil and bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
- Remove the foil and bake for an additional 5-10 minutes, or until the cheese is golden brown and the edges are bubbly.
- Remove the casserole from the oven and let it cool slightly before serving.
